Chef Poe's Cucumber Salsa

Kriston Poe is a dedicated Culinary Arts and Creative Foods teacher at Liberty High School in Peoria, Arizona, where she has been inspiring students since 2004. CHEF POE’S CUCUMBER SALSA

This cucumber salsa is crisp, fresh and delicious!

PREP TIME: 15 minutes TOTAL TIME: 15 minutes YIELD: Approx. 6 cups

INGREDIENTS

  • 2 large cucumbers, chopped, skins on and seeded (about 4 cups) -small dice

  • 1-2 roma tomatoes, chopped small dice

  • 1/2 red onion, chopped-small dice

  • 1 jalapeno, chopped-brunoise dice (seeded or leave some for heat)

  • 1/2 cup cilantro (to taste)

  • 1 can Rotel, (drained)

  • 1 Ranch dressing packet

  • 1/4 cup white wine vinegar

  • Salt (to taste)

  • Pepper (to taste)

Mix everything together and chill overnight for the best flavor!
